Sometimes people tell me they can’t cook. To which I reply, “me neither!” A Pioneer Woman I am not. But I do know how to put together a bunch of healthy ingredients and turn them into a healthy meal in under 20 minutes flat.
This is a meal the fiance and I made one night at my apartment, when we were both tired and overworked and not into being creative. I give you Gluten-Free Penne a la Vodka with Chicken Sausage and Spinach Salad. It’s not particularly lovely (and my dark kitchen and tiny table didn’t help this photo), but it was definitely warm and yummy.
I used De Boles gluten-free rice penne, Seeds of Change vodka sauce (the ingredient label reads like homemade sauce), and Applegate Farms organic sweet Italian turkey and chicken sausage.
We used the whole package of pasta, all 4 sausages, and 1/2 of the jar of vodka sauce to make enough to feed us for 5 meals.
The allergy/food intolerance info: The pasta is gluten-free, corn-free, soy-free. The sausages are gluten-free, dairy-free, casein-free, and antibiotic and hormone-free. And the vodka sauce is gluten-free itself (though it’s made in a factory that processes gluten containing foods). Any other good ideas for 20 minute meals? I just saw this recipe for gluten-free, sugar-free, vegan pumpkin bread today and I’m dying to try it!
